Villa Poggio Salvi, Vaio BLUEBERRY The palate is dry withFrom the winery: The grapes start ripening by August and the grapestone skin slowly acquires a darker color: it's a process locally called "invaiatura". Vaio is in fact an old adjective standing for "spotted or dappled with dark or black spots" and for "blackening, as said of fruit, olives, grapes, when ripening". We have named this wine Vaio in honor of this old word now forgotten. Our Vaio red wine, yet another precious gem coming from the territory
