This wine is made sous voile (under a veil of yeast) in a 25 hectoliter foudre without topping up, allowing controlled oxidation. After bottling the previous vintage, the wine transfers into 400 liter barrels of Jura oak to complete aging. The result is a distinctive expression of this mutant grape, marked by minerality, spice, and
